Salted Peanut Butter and White Chocolate Blondies | Recipe
This is another super easy recipe that takes very little time to mix and pop in the oven. Now I do love brownies, but in life there is definitely a place for blondies, especially peanut butter ones. These Salted Peanut Butter and White Chocolate Blondies will be very difficult to share if that’s your plan. You may want to bake two batches… haha!
Salted Peanut Butter and White Chocolate Blondies

Ingredients
- 190 g Self raising flour
- 1 tsp salt
- 120 g Butter melted
- 180 g Crunchy peanut butter melted
- 300 g Golden caster sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 100 g White chocolate chopped, smashed or in chips
- 100 g White chocolate melted
- Sea salt flakes
Instructions
- Preheat oven to 170˚C. Grease and line a 20cm brownie tin with baking paper, square or rectangle will do.
- In a medium saucepan, melt the peanut butter with the butter. Once melted, allow to cool slightly. Then add to a mixing bowl with the sugar and vanilla extract and stir to combine. Beat in the eggs, one at a time.
- Fold the dry ingredients and the chopped up white chocolate into the wet mixture, and mix well. Pour the batter into the prepared tin and sprinkle with sea salt flakes.
- Bake for 25-30 minutes or until a the top is cracked and there’s a little wobble. Remove from oven and allow to cool fully.
- Melt white chocolate over a pan of water and drizzle on top. Allow to set then cut into pieces.
I know flour is still a difficult thing to source in some supermarkets. So if you can’t get self raising flour, plain will do. Just make sure you add a tsp of baking powder if you go down this route. If you’re not a fan of white chocolate, I am sure dark will do. But I quite like the sweetness of the white chocolate to balance the salty peanutty-ness! If you want to be super extra you could sprinkle chopped roasted peanuts on the white chocolate after drizzling.
