AD | Spicy Pork and Peanut Noodles Recipe

I was recently sent Skippy Peanut Butter for some more recipe experimentation. Last time I made Peanut Butter Cookies. But this time I thought I’d create something savoury and somehow I’ve created one of my favourite recipes this year. We’ve made it quite a few times now and it’s become rather a staple in our household.

Spicy Pork and Peanut Noodles

A wonderful sweet and salty dish for peanut lovers out there!

Ingredients

  • 225 g pork mince
  • Veg oil
  • 3 tbsp minced garlic
  • 2 tbsp finely chopped root ginger
  • 1 finely chopped red chilli
  • 1 white onion diced
  • 3 tbsp crunchy peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp chilli oil or 1 tsp chilli flakes if you don’t have
  • 250 ml hot chicken stock
  • 2 Nests Egg Noodles
  • Stir fry veg pack from the supermarket
  • 1 tbsp Sichuan peppercorns roasted and ground

Instructions

  1. Cook the pork mince in veg oil in a wok/deep sided frying pan on a medium/high heat. Whilst doing this cook your noodles as per packet instructions.
  2. Cook the pork mince until browned and any water has cooked off, if there is excess fat ladle it away, you want it quite dry.
  3. Once you are happy with the pork add the garlic, ginger, chilli and onion, fry for a few minutes. Then add the peanut butter, soy sauce and chilli oil (or flakes). Fry again for a few minutes until fragrant.
  4. Add in the stock and simmer on a medium/low heat.
  5. Start cooking your stir fry veg in a saucepan whilst the pork simmers.
  6. When the stir fry veg is nearing being cooked, add in the egg noodles and fry for a couple of minutes.
  7. When the noodles are fried off, the pork should be done. You can now serve the pork on top of the noodles in bowls. Sprinkle with the ground Sichuan peppercorns. Enjoy!

Now I know I’ve made this my Spicy Pork and Peanut Noodles recipe, but I know not everyone likes or can eat pork. I reckon it’d work/taste fine with a different type of meat mince (turkey or beef) and it would even work well with soy mince if you’re veggie/vegan. It needs to be mince though, because of the sauce. Mince makes this peanut butter sauce thick and delicious, it won’t work so well with chopped meat. You also definitely need to use the crunchy peanut butter, otherwise you won’t get those lovely chunks of peanuts running through the sauce.
