A Festive Treat with Mince Pie Cookies | Recipe

So good my Mince Pie Cookies were (perfectly soft and gooey) I had to share the recipe with you. If you have a stand mixer (like my Kenwood) you will find these Mince Pie Cookies very easy to make. Although even if you’re making by hand they are still easy to make as once the dough is combined you spoon it onto the baking tray.

Mince Pie Cookies

A wonderfully festive, soft, doughy cookie. Perfect with ice cream.

Ingredients

  • 250 g Unsalted, softened butter
  • 140 g Caster sugar
  • 300 g Self raising flour (Sifted)
  • 411 g Mincemeat
  • 1 Egg yolk

Instructions

  1. Preheat the oven to 170C Fan (180C). Cut some grease proof paper to the tray size you’re using, I baked 6 cookies at a time in 4 batches.
  2. Cream the butter and sugar until soft and fluffy.
  3. Add the egg yolk, beat together to combine.
  4. Add the flour, and slowly fold in (lowest setting on stand mixer).
  5. Fold in the mincemeat (lowest setting on stand mixer).
  6. Bring speed up until rough dough forms.
  7. Use a spoon to put a dollop a couple of inches apart from another dollop on a lined baking tray. As earlier, I baked 6 cookies at a time. (Picture above).
  8. Bake for 10-12 minutes, make sure soft in the middle and golden on the edges. Turn out (gently) on a wire rack to harden.

Honestly I was so chuffed with how these turned out. They’re still as tasty as mince pies, but also easier. No pastry faff. Just make up your dough and bake. If you have a bigger oven than me you could probably bake more at a time. Just keep an eye on them whilst they’re cooking.
