Birthday Cake Whoopie Pies | Recipe

I’ve always wanted to make Whoopie Pies so when better to decide too, but during a heatwave! Luckily the mixture can be kept cool between batches by popping in the fridge. This goes for the buttercream and generally the Whoopie Pies when you’re done with them.

Birthday Cake Whoopie Pies

Delicious cakes filled with buttercream and covered in sprinkles!

Ingredients

For the Cakes

  • 115 g Softened butter unsalted
  • 250 g Caster sugar
  • 2 Eggs beaten
  • 1 tsp Vanilla bean paste
  • 150 ml Sour cream or buttermilk
  • 300 g Self raising flour seived

For the Buttercream

  • 400 g Icing sugar seived
  • 200 g Softened butter unsalted
  • 2 tbsp Milk
  • 1 tsp Vanilla bean paste
  • Sprinkles

Instructions

For the Cakes

  1. Preheat the oven to 180c/160c fan.
  2. Beat the sugar and butter together, it becomes a bit dough like.
  3. Add in the beaten eggs and a table spoon of flour stir for a couple of minutes. Then add in the vanilla bean paste and sour cream, stir again.
  4. Then gently fold in the flour. The cake batter may be a bit dough like.
  5. To cook these, you need to do it in batches. Line a flat baking tray and put tablespoons of mixture 2 inches apart, they will spread as they cook. For mine this was 6 at a time. You may have a larger tray and be able to cook more at a time.
  6. Cook for 8 minutes, or until lightly golden. Take out the oven and leave to cool for a bit before putting on a cooling rack. Repeat until all the mixture has been cooked. Leave to cool completely before the next step.

For the Buttercream

  1. Beat the icing sugar, milk, vanilla bean paste and butter together until smooth. I used my stand mixer for this.
  2. Spread the butter cream on one side of the Whoopie Pie disc, then sandwich it with another. Make sure some of the icing sugar sticks out.
  3. To add the sprinkles I poured mine in a bowl and spooned them on with a teaspoon over the bowl so the ones that didn’t stick fell in. I turned the Whoopie Pie as I sprinkled the sprinkles.
  4. Keep going until you’re finished!
