A Super Summery Eton Mess Tray Bake | Recipe
I thought I’d share the recipe for my Eton Mess Tray Bake because it proved to be so popular with my bake club. Also tray bakes are totally the way forward, I have quite a few tray bake recipes if you have a look through my baking category. From brownies, to my lemon and blueberry tray bake. I’ve never been the best at fancy cakes or decorating so tray bake cakes are my thing!
Eton Mess Tray Bake

Ingredients
- 175 g unsalted butter
- 5 tbsp double cream
- 1 tsp vanilla paste
- 225 g self-raising flour
- 100 g ground almonds
- 200 g soft light brown sugar
- 5 large eggs
- 400 g strawberries ½ roughly chopped, ½ finely sliced
- 4 meringues nests very roughly broken up
Instructions
- Grease a deep, a tray bake tin, then line with parchment. Heat the oven to 170C/150C fan.
- Mix the flour, almonds, baking powder and ¼ tsp fine salt and set aside for later.
- Melt the butter, take off the heat and stir in the cream and the vanilla.
- Put the sugar and eggs into a large bowl, and whisk with electric beaters (or use a stand mixeuntil very thick and foamy, about 5 mins at mid-power. Pour in the butter mix, whisk for another minute, then add the flour mix and fold in until even. Stir in the chopped strawberries, then pour the batter into the tray bake tin.
- Scatter the sliced strawberries and broken meringue over the cake, then bake for 50-55 mins until risen (you may need to use some parchment on top to stop it from catching), golden and a skewer comes out clean. Cool in the tin, then take out and chop up.
The cake will keep in an airtight container for a few days. You could dust with icing sugar or add a dollop of whipped cream before serving. It really is the perfect summery bake for any party, BBQ or work bake club! And before you ask no I didn’t make the meringues, life is too short for that.
