Winter Warmer Toffee Apple Muffins | Recipe

I got the idea for Toffee Apple Muffins after last year baking an apple cake (I’ll have to share that recipe too). I’d served it warm with salted caramel and ice cream. It got me thinking when I went to bake it again, could I make something a bit easier to transport to work that contains these flavours. So here we are! There’s nothing like toffee, caramel and apple together. If you make as well, I really hope you enjoy like we did.

Toffee Apple Muffins

Ingredients

  • 2 free-range eggs lightly beaten
  • 80 g Caster sugar
  • 240 ml Milk
  • 100 g Unsalted butter melted
  • 300 g Plain flour seived
  • 2 tsp Baking powder
  • 1 tsp Mixed spice
  • 2 Apples peeled, cored, grated or finely chopped
  • 200 g Toffee pieces
  • Salted Caramel Sauce

Instructions

  1. Preheat the oven to 190C (180C fan) and prep your muffin tray with 12 cases.
  2. Mix the eggs, sugar, milk and melted butter in a large bowl. Sift the flour, baking powder and mixed spice into the bowl.
  3. Fold the flour mix in.
  4. Add the chopped apple and toffee pieces, lightly fold again.
  5. Using half of the mixture, quarter-fill each of the muffin cases with the mixture and then dollop the salted caramel sauce on top.
  6. Cover with the remaining filling so the cases are half full.
  7. Bake for 30-35 minutes until well risen.
  8. Transfer to a wire rack to cool.
  9. Serve with a brew.
