Chocolatey and Indulgent M&M Brownies | Recipe

I’ve recently decided to try and get back into sharing recipes more often again. As well as my travel posts, sharing recipes that are easy to make and super tasty seem to be popular! I also get a lot of requests to share recipes from my baking and cooking escapades on my Instagram stories in a more permanent way. So, yeah, expect more recipe posts. Which means today I’m sharing my M&M Brownies. I won’t lie I wanted to make Ferrero Rocher Brownies at first, but they’ve been rather marked up ahead of Valentine’s Day. So M&M Brownies it was!

M&M Brownies

An indulgent, but easy bake.

 Prep Time 15 minutes

 Cook Time 35 minutes

 Total Time 50 minutes

 Servings 16 brownies

Ingredients

  • 250 g pack salted butter plus extra for greasing
  • 200 g golden caster sugar
  • 200 g light muscovado sugar
  • 100 g cocoa powder
  • 4 large eggs
  • 100 g self-raising flour
  • 90 g M&Ms plus extra for the top justifies you buying two share bags and eating one to yourself whilst baking

Instructions

  1. Heat oven to 180C/160C fan/gas 4. Lightly grease and line the base and sides of a 21-22cm square tin with baking parchment.
  2. Put the butter, sugars and cocoa into a saucepan on a low heat. Gently melt together, stirring regularly so the mixture doesn’t catch. Once the mixture has started to come together, take off the heat, tip into a your mixing bowl and leave to cool for 5 mins.
  3. Use a whisk or wooden spoon to beat the eggs, one by one, into the mixture. When they’re completely incorporated and the mixture is smooth and shiny, fold in the flour and 90g of the M&Ms.
  4. Tip the mixture into the prepared tin, then scatter a few more M&MS on top of the brownie mixture. Bake for 35 mins.
  5. Remove the tin from the oven and allow to cool completely. Once cool, cut into 16 squares. Will keep for 3 days in an airtight container.
