Popcorn Rocky Road Recipe

My Popcorn Rocky Road is easy peasy and will go down a treat with family, friends and co-workers. As usual it did not last long in the office when I took in what was left after Dr W had tried some. FYI I made this rocky road using dark and milk chocolate, which is something I always recommend. The dark adds some luxury, the milk makes it lovely and creamy. Plus the combo is super more-ish. I also did my usual of adding some sweets to the top, I always find this goes down a treat. Dolly Mixtures are my go to for this. Scroll down for the recipe!

Popcorn Rocky Road

A delicious, more-ish, chocolatey, gooey snack.

  • 100 g Dark Chocolate
  • 200 g Milk Chocolate
  • 125 g Unsalted Butter
  • 1 tbsp Runny Honey
  • 180 g Popcorn
  • 80 g Marshmallows
  • 80 g Dolly Mixtures


  1. Line a brownie tin. Melt the butter and honey in a pan on a medium heat. Take off the heat.
  2. Add the chocolate into the pan and stir until melted.
  3. Add in all the popcorn and two thirds of the marshmallows and stir. Pour out into the brownie tin and level off with a spoon.
  4. Sprinkle over the remaining marshmallows and dolly mixtures. Pop in the fridge for 2 hours then slice up.

Recipe Notes

Replace the marshmallows for veggie ones and use veggie sweets – then everyone can have them!
