Christmas Leftovers Cheese Toasties with Snowdonia Cheese

My Christmas Leftovers Cheese Toastie with Snowdonia Cheese is wonderfully versatile. Basically the aim of the game is to create a toastie(s) with whatever leftovers grace your fridge after the big day. Whether you’re a veggie or a meat eater this will work for you! Vegans you could attempt if you know how to do a vegan béchamel – something I have no idea about (sorry).

Christmas Leftovers Cheese Toasties

A super cheesy way to enjoy Christmas Leftovers.

Ingredients

  • 4 Slices of bread
  • Margarine (for spreading)
  • 200g Snowdonia Mature Cheddar Cheese (grated or sliced)
  • Christmas Day leftovers (chicken, turkey, stuffing, veggies. etc)
  • Cranberry sauce
  • 25 g Plain flour
  • 25 g Butter/Margarine
  • 200 ml Milk

Instructions

  1. Butter your slices of bread on one side, grate your cheese and chop up the leftovers to manageable sizes (you will create your toastie whilst cooking so prepare beforehand!)
  2. Melt the 25g butter in a pan, add the plain flour and stir until a dough is formed. Then slowly add milk until you get a thick sauce. Add in half the cheese to make the cheesy sauce. Put the sauce to one side.
  3. (Do this twice – make your toasties one after the other unless you have a big enough pan/feel confident you can move quick enough to do two). Heat the frying pan and put in one slice of bread – BUTTER side down. This is important. At this point build your toastie starting with cheese, then the leftovers, then a little more cheese on the top. Before you put your top slice of bread on, put some cranberry sauce on top of the toastie contents. Put your top slice of bread on BUTTER side up. Flip the toastie and press down to compress the contents. You’re doing 3-5 mins on each side. Keep an eye on them though – make sure the heat isn’t too high.
  4. Once you have both your toasties put in a roasting tin and pour your sauce over the top. Pop under a hot grill until the sauce browns and bubbles – make sure they don’t burn. Then enjoy!

Overall this is a smashing way to use up Christmas leftovers and not too difficult either. These cheese toasties make a real change from your usual curries or bubble and squeak. Snowdonia Cheese also make different flavoured cheeses, their Cheddar with Port or Cheddar with Cranberry would also work well in this toastie.
